Risotto with cuttlefish ink, trout and cherry tomatoes. This spectacular sous vide trout could not be more juicy! The process allows the trout to absorb all the flavors added to the bag. You can always sub the risotto for any other side you prefer.
For everyone not familiar with cooking a whole fish, don’t be afraid. Most stores pre slice them, that way all you have to do it stuff it with whatever ingredients you like. I love citrus flavors! For this recipe I used sliced limes and mango but other good ideas would be oranges, rosemary, sliced onions, shallots... way to many options to choose from
