Hop Savant (7.0% ABV, 70ish IBUs) American Brettanomyces India Pale Ale by Crooked Stave Artisan Beer Project in Denver, Colorado.
OK, so I took the brewery notes from the canned version of this ridiculously awesome American wild IPA. Still holds true. While I dig the bottle look I'm sure the can keeps things much fresher. A good move on their part. This is an IPA for the funkhead. Loaded with Brett character - musty barnyard, rubber cement, wet hay, all the goodies - and swimming with fresh hop aroma. They've restrained the bitterness just enough to let the wild yeast character do its thang. Hello, my name is Hop Savant. You funked my IPA, prepare to drink.
Brewery Notes - "Our brewers work tirelessly, deliberating over new ways to expand the flavors and aromas derived from hops while limiting the bitter components. Fermented with our Brettanomyces mixed yeast culture, Hop Savant showcases unique characteristics only obtained through fermentation with wild yeast. Do not expect a sour beer, this is a hoppy IPA style beer brewed with our Brettanomyces yeast strains. Unfiltered and naturally wild, we package each can with a small amount of yeast to maintain maximum freshness for wherever life's adventures take you."
