Warm vegan chilli loaded with spices and mixed veggies great source of plant based protein and fibres! As most of meaty chillis have cheese or sour cream on top, I decided to try a new soft vegan cheeze from @new__roots and I absolutely love it!! Highly recommended

Brown Rice with Sun-Dried Tomatoes and Mushrooms

3 cups cooked brown rice
1 small onion, finely chopped
2 garlic cloves, minced
2 cups sliced mushrooms
1 cup sliced sun-dried tomatoes
salt and pepper to taste
1/4 cup fresh parsley, coarsely chopped
Heat the oil in a large pan or wok over medium heat. Add onions and cook for about 3 minutes until golden. Add garlic and cook for another 30 seconds. Add mushrooms and cook for about 7 minutes, until soft and deep golden brown. Add sun-dried tomatoes and rice. Stir and continue cooking for 3-5 minutes. Season to taste. Serve warm, garnished with fresh parsley. Enjoy.
Note: I also served mine with fresh snow peas, just cause I had some in a fridge and needed to use them
