A plate of yellow tonight in the form of Khandvi!
This is a favourite in our house... It is usually eaten as a starter or as a snack... Delicious rolls of turmeric spiced gram flour (so it’s gluten free ) sprinkled with a spicy topping of popped mustard seeds... curry leaves .... coconut 🥥 (ohh love the new emoji!)... cumin... chilli and sesame

⚕️ Gram flour or chick pea flour is a a great gluten free alternative to wheat flour. It is usually a staple in most Indian households and used in a variety of sweet and savoury dishes! It is naturally higher in protein than wheat flour and rich in fibre, iron, potassium and folate. If you haven’t tried it - please do - its delicious!
1 cup gram flour
1 cup full fat yogurt
2 cups water
1 teaspoon turmeric, salt to taste.
The principle is simple, mix the above ingredients to make a smooth batter. Heat slowly until cooked and keep stirring... and stirring until you get a thick paste (see my instastories for more on that). As soon as it’s cooked and thick you need to pour the mix onto a cool flat surface like a granite worktop and spread it as THINLY as possible like a Flat sheet of paper. SUPER THIN before it sets. This is the tricky part! Then slice and roll into rolls as shown.

Topping: 1 teaspoon coconut oil heat and add 1 tspn mustard seeds. As soon as they ‘pop’ add 1 teaspoon cumin, 20 curry leaves, 1 chopped green chilli, 1 tablespoon sesame seeds, 1 tablespoon grated coconut (or desiccated if you don’t have fresh), 2 tablespoons chopped coriander. A squeeze of lime. Mix for a few seconds and sprinkle over the rolled Khandvi. Enjoy!
