These are soooo good! We eat these a lot on Fridays during Lent. - Gluten free too! :) Shrimp Cakes
1 lb(raw) shrimp, peeled and deveined
1 red or yellow bell pepper, finely chopped
1 clove garlic, minced
2 Tbs green onions, thinly sliced
1 Tbs lime juice, freshly squeezed
1 Tbs raw honey
½ tsp sea salt
¼ tsp ground chipotle spice or chili powder
½ cup cilantro, finely chopped
½ cup almond flour
3 Tbs coconut oil
Place shrimp in food processor, pulse until finely chopped.
In a large bowl, combine chopped shrimp, bell pepper, garlic, scallions, lime juice, honey, sea salt, chipotle, egg and cilantro.
Form mixture into 12 (½) inch thick patties, dip each in almond flour, coating thoroughly.
In a large skillet, over medium heat, warm 1 tablespoon oil.
Add 4 patties to the skillet and cook about 5 minutes per side, until browned; remove and place on paper towel lined plate.
Repeat with remaining cakes
Golf may seem like a low intensity-low endurance kind of sport but without proper fueling strategy in training and tournaments, precision and accuracy will be negatively affected. Andrew’s #Transformation is from poor eating habits which robbed his performance as an archeologist, to developing a solid body that lets him dig the day away.
I gave him nutritional coaching. But I knew he needed to train with someone else. Swole mates are good, but he was so far behind me! Im increasing his diet for more Mass Building. It hasn’t been easy, he resisted 🤦🏽♀️ my recommendations and even balked at times!
His weekly groceries were like this !!!!! for years:
frozen pizzas - sometimes the whole pie.
frozen mixed vegetables corn, peas and carrots - that was his vegetable intake.
sugary chocolate coated granola bars - for breakfast.
Sounds like a University student! Those habits were hard to break. I tried for years to help him. Then finally it was time.
lean meats - he’s an omnivore.
frozen broccoli, bell peppers & mushrooms!
rice, pasta, potatoes & whole grain bead.
legumes & lentils- he eats some of my Vegan food.
and no more whole pizzas in one sitting!
