Came out to sample the beauties that David was putting out!
First, you should know that he is an absolute gentleman and his wife Ana is so welcoming that from the moment you walk up to his truck, you'll know it was worth the trip.
Second, we are talking about a tried and true pizza enthusiast. Someone who has been perfecting his craft for 7+ years; not only at home but by learning from some big time pizzaiolos. He executes this passion with the respect it deserves: first rate sourcing and preparation with the necessary time (~4 day total ferment). Ok, but how about the food? Excellent! Dough with character from tender but noticeable chew that gradually releases complex flavors from slow rise and true to Neapolitan form charring (stronger leoparding is limited by Roccbox oven). Toppings are nailed as well: lively natural tomato sauce, mozzarellas with playful pull and light milky notes, beautifully cupped charred pepperonis, noticeable honey bursts, fresh vibrant vegetables, and mild creamy sriracha ranch.
Come before you need to beat the crowds. Strongly recommended.
