Daily shine :-: treat.
I was mesmerized by the chefs. The pride and passion heavy in the chocolate filled air. I paused here for a good 3 deep puffs.
I felt like a person watching live music, an upscale busker moment.
I would tip them, so I’ll tip them AND I’ll enjoy their art.
My favorite part was his accent and his clear advice “ eat it from the top down “
Note taken and DAMN!
My whole self felt the love that created this treat. I don’t know what they are called— and now I understand his puzzled look when I answered yes to his only one comment.
I may or may not have gone back 3 times.

Who likes fluffy pita bread??
Traditional Pita Bread Recipe Ingredients: 1 1/8 cup warm water 3 cups all-purpose flour 1 teaspoon sea salt 1.5 tablespoon olive oil 1 tablespoon clover honey 1.5 teaspoon active dry yeast Bread maker ( my original recipe calls for a bread maker but this is for those who don’t have one.) Optional: You can add any herbs or spices to this recipe for additional flavor.
Directions: Mix water, oil, honey, yeast, and salt together. Stir in the flour, until mixture comes together. Knead the dough for 8 minutes or until the dough is smooth and pliable. Place the dough in a lightly greased bowl, and let double in size.
Once dough has doubled, place on lightly floured surface and punch dough down. Gently roll and stretch the dough into a 12 inch rope. With a sharp knife, divide the dough into 10 pieces. Roll each piece into a small ball. With your hand or rolling-pin, make each ball into a 7 inch circle. Place the dough onto a baking sheet, and cover with a towel. Let the pita rise about 30 minutes or until puffy. Preheat the oven to 475 degrees. Place 4 pitas on a wire cake rack in the oven. Bake pitas until puffed and lightly golden brown on top.
Remove from oven and place the cooled pita in a sealed bag to store. I like to drizzle fresh lemon and olive oil over the top of the pitas just before I remove them out of the oven. .
