Definitely simplifies weekday evenings and ensures we don't rely on take-outs for dinner. Roast meatballs in oven and freeze for later use. Can be kept in freezer for up to 2 months. Frozen meatballs can be thawed overnight or reheated directly from freezer. Reheat in simmering sauce for 10-15 minutes or in a warm oven for 10-15 mins. I used a recipe from thekitchn.com titled "how to make meatballs from scratch" and I recommend it without hesitation. Simple, moist, delicious & best of all, my picky 4 year old loved it. It does include bread crumbs so not great for the gluten-free folk however I'm sure there are good gluten-free recipes out there as well! Yes it takes time, yes it's annoying and seems unnecessary but meal prepping has saved my butt so many times from being really hungry and just grabbing whatever. Also I'm thankful my man has jumped onboard with trying to eat healthier😊 Makes things so much easier and he has lost 8 pounds in just two weeeks already by cutting out fast food, beer (mostly😂), choosing healthier options and working out almost everyday! 〰️Failure to plan is planning to fail〰️ . Like most people I try my hardest to make sure my nutrition is on point during the week. BUT also like most people the weekend comes with its own challenges. I’m normally running around between my house and my boyfriends house and nutrition is the last thing on my mind. I want to have FUN, so I give my self a “cheat meal” (ahem a cheat WEEKEND) and lose all my progress from the week before. Which really sucks. . But I’m feeling so good on this program that I’m taking extra time during to week to make sure I have every one of my meals prepared, from Friday afternoon to Monday morning. I will NOT be defeated by pizza this weekend.
